This nutritious salad can be an accompaniment to any meal or stand on its own. It’s quick, easy, can be put in a Tupperware container and taken for lunch.

Serves 6

1 cucumber

2 tomatoes, chopped

8 spring onions

1/2 cup of mint, chopped

2 cups of fresh parsley, chopped

1 clove of garlic, chopped

4 tbs EVOO (extra virgin olive oil)

1/2 cup of lemon juice

Salt and pepper to taste.

Combine all in a bowl, toss until combined.

PTN – 2, CHO- 10, FATS – 10 – 125 Cals per serve.
